Panadería tradicional de Nulti y su aporte a la cultura cuencana

In the present research project, the culinary culture developed around traditional bread made in the rural parish of Nulti was studied; belonging to the canton of Cuenca, a place that is characterized by the elaboration of bread made in a wood oven. With a bibliographic review, information was collected about the history of the parish, the socio-cultural and economic characteristics of the population and its traditions. Through fieldwork with surveys and interviews with 17 bakers, first-hand information was obtained which served to know that, most bakers are: over 50 years old, they are dedicated to this trade since childhood, son women and their knowledge of the process of making bread was acquired by the teaching of their parents, grandparents and relatives; even one of the families that are dedicated to this work is for the sixth generation of bakers. It has been for approximately 200 years that this trade has take place in the parish, the families have maintained the same ingredients, the same process of elaboration and baking so as not to lose the flavor and aroma that characterizes Nulti bread.
