    Elaboración de postres y bollería con base en seis tipos de manzanas producidas en los cantones: Paute, Chordeleg y Sigsig en la Provincia del Azuay

    This intervention project proposes the preparation of desserts and pastries based on six types of apples produced in Azuay, in the cantons of Paute, Chordeleg and Sígsig. The apples chosen for this case correspond to the varieties, Ana, Gala, Golden Delicious, Granny Smith, Fuji and RomeBeauty. An in-depth bibliographical investigation of the apple and the techniques used in the area of ​​pastry and bakery (pastries), as well as of the use of an unstructured interview, experimentation methods both for the organoleptic analysis of the fruit, as well as in the creation of 15 recipes that were subjected to a taste analysis by a group focal. As a result, the production of an author recipe book called “Azuay apples”. Desserts and Pastries, which includes nine recipes selected in three different categories.
