    Conocimientos, actitudes y prácticas de medidas higiénico- alimentarias en los estudiantes de segundo de bachillerato de la Unidad Educativa San Francisco, Cuenca-2017.

    Background: According to the Pan American Health Organization (PAHO), any person can transfer pathogens to any type of food; but this can be avoided by proper personal hygiene and manipulation (1). Objetive: To determine the knowledge, attitudes and practices of hygienic-alimentary measures in the high school students of the Unidad Educativa San Francisco of the city of Cuenca in the year 2017. Methodology: A descriptive and transversal research was carried out. The universe was made up of 240 high school students from the Unidad Educativa San Francisco. A survey was conducted and the information was collected on forms. The data were processed using the SPSS V.15 program using absolute frequency and percentages, which were represented in tables Results: The majority of students are between 18 and 21 years of age (33.8%), are male (55.8%) and live in urban areas (62.9%). 96.3% know what hygiene is, 86.7% know what the hygienic-alimentary measures are and the risk of not practicing them is 84.2%. For 39.6%, the main measure is to wash their hands before handling food, 97.1% said that it is important to apply them regularly and the main reason is to avoid diseases (44.6%). The rules that are least followed are wash the fruits and vegetables before consuming them (46.7%) and wash hands before eating (45.8%). Conclusions: The students analyzed have a good knowledge of the hygienic-alimentary measures and have a positive attitude towards them, but their practices are insufficient.
