    One of the very popular food in Ecuador and more specifically in the city of Cuenca is the sweet milk, which has a high consumption between people of all ages. Knowing bromatological and microbiological quality is one of the objectives of this investigation, especially because the sweet milk that is sold as a street vendor in the market “Feria Libre” does not have the relevant authorization. To conduct this purpose was taken as the standard reference INEN 700 in where they are exposed the requirements physicochemical and microbiological of this product, the samples were taken from five points of sale for five consecutive weeks (a weekly sample). It was shown that the sweet milk object of study has a risk to human health, because the parameter count of molds and yeasts and humidity are outside the allowed limit.
