    Control microbiológico de granizados y agua de sábila de venta ambulante en la ciudad de Cuenca

    The objective of the present work was to carry out the microbiological control of granizados and aloe water sold in the city of Cuenca, due to the need of the urban control authorities of the Municipal GAD to know the hygienic - sanitary conditions in that these products are consumed and the importance of said conditions in the health of the population. The sampling was done considering the municipal cadastre, being analyzed the total of samples from the vendors registered in the cadastre. Microbiological determinations were performed using 3M ™ Petrifilm ™ Plates. For the data processing, the statistical analysis of frequencies was carried out, which allowed to obtain a description of the distribution of the variables through the use of frequency tables, pie charts and histograms developed in Microsoft Excel ®. Most of the results indicate that the food evaluated does not meet the microbiological requirements of the standards applicable to them, generating concern on the part of the control authorities. As part of the titling work, a Training in Good Handling Practices (GHP) was carried out in conjunction with the City Control Department of the Municipal GAD.
