Abstract: | Intestinal parasitosis represents a common disease with notable morbidity and mortality that affectsthe world, closely linked to conditions of poverty and deficiencies in hygienic-sanitary practices. There is an obvious connection between parasitosis and foodborne illnesses (FBD). The main objective of this study is to determine the presence of enteroparasites in vegetables sold in the August 10market in the City of Cuenca, during the period from July to December 2023. To carry out this research, a non-experimental design was implemented. descriptive observational type with quantitative approach and cross section. The sample consisted of 25 samples of each type of vegetable, totaling 200 samples selected through non-probabilistic convenience sampling. Fresh and Lugol tests were performed on these samples for identification through optical microscopy. The results obtained reveal deficiencies in the hygienic practices to which the plants are subjected. Lettuce, parsley, and cilantro were identified as the vegetables most contaminated by parasites. Among parasitic species, protozoa were the most abundant, followed by helminths. Greater pathogen positivity was observed in lettuce (Chilomastix mesnili), onion, pepper, and carrot (Ameba coli), tomato (Endolimax nana) and coriander (Giardia lamblia). In conclusion, it is determined that the vegetables available in the August 10 market in the City of Cuenca present contamination by enteroparasites, which constitutes a significant epidemiological risk for the appearance of gastrointestinal diseases |
Description: | La parasitosis intestinal representa una enfermedad frecuente con una notable morbimortalidad que afecta a nivel mundial, estrechamente vinculada a condiciones de pobreza y deficiencias en las prácticas higiénico-sanitarias. Existe una conexión evidente entre la parasitosis y las Enfermedades Transmitidas por Alimentos (ETA). Este estudio tiene como objetivo principal determinar la presencia de enteroparásitos en verduras comercializadas en el mercado 10 de agosto de la Ciudad de Cuenca, durante el periodo de julio a diciembre de 2023. Para llevar a cabo esta investigación, se implementó un diseño no experimental de tipo descriptivo observacional con enfoque cuantitativo y corte transversal. La muestra consistió en 25 muestras de cada tipo de verdura, totalizando 200 muestras seleccionadas mediante muestreo no probabilístico por conveniencia. A estas muestras se les realizaron pruebas de fresco y Lugol para su identificación a través de microscopia óptica. Los resultados obtenidos revelan deficiencias en las prácticas higiénicasa las que son sometidos los vegetales. La lechuga, el perejil y el culantro se identificaron como los vegetales más contaminados por parásitos. Entre las especies parasitarias, los protozoos fueron los más abundantes, seguidos por los helmintos. Se observó una mayor positividad de patógenos en la lechuga (Chilomastix mesnili), cebolla, pimiento y zanahoria(Ameba coli), tomate (Endolimax nana) y culantro (Giardia lamblia). En conclusión, se determina que las verduras disponibles en el mercado 10 de agosto de la Ciudad de Cuenca presentan contaminación por enteroparásitos, lo que constituye un riesgo epidemiológico significativo para la aparición de enfermedades gastrointestinales |
