| Abstract: | This project conducts research focused on the nutritional, organoleptic, physical and
chemical components, pH and fructose level of cocoa mucilage; in order to create a
formulation that allows us to produce an energy and / or refreshing drink, with natural
components, focused on generating an alternative to the internal use of the product applied
to the community. Thus allowing the community to provide a product that facilitates an
increase in energy and performance in daily activities. The research work is divided into four chapters, where the first chapter explains the theoretical framework that analyzes the historical information of cocoa, its classification by
shape and aroma, the amount of production and waste of mucilage in percentage to its
cultivation. The second chapter describes the research on cocoa mucilage, its
characteristics and nutritional properties, which will allow us to know the amount of
carbohydrates, proteins, sugars among others, generating the basis of the research and facilitating the fulfillment of the third
objective, which refers to the organoleptic characteristics of the product, which will be
developed with the help of the Iche Research Center Manabí cuisine, which will accompany
us in the research and development of the objective. The fourth chapter uses the knowledge
and research developed in order to outline the formula, which empowers its application in a
drink of rapid absorption, providing the energy that allows us to meet our main objective.

| Description: | El presente proyecto realiza una investigación enfocada en los componentes tanto
nutricionales, organolépticos, físicos y químicos, PH y nivel de fructosa del mucílago de
cacao; con la finalidad de crear una formulación que nos permita producir una bebida
energética y/o refrescante, de componentes naturales, enfocados a generar una alternativa
al aprovechamiento interno del producto aplicada a la comunidad. Permitiendo brindar así a
la comunidad, un producto que facilite un aumento de energía y rendimiento en las
actividades diarias. El trabajo de investigación se encuentra dividido en cuatro capítulos, donde el primer
capítulo se explica el marco teórico que analiza la información histórica del cacao, su
clasificación por forma y aroma, la cantidad de producción y el desperdicio del mucílago en
porcentaje a su cultivo. El segundo capítulo describe las investigaciones acerca del mucílago de cacao, sus
características y propiedades nutricionales, que nos permitirán conocer la cantidad de
hidratos de carbono, proteínas, azúcares entre otros, generando la base de la investigación
y facilitando el cumplimiento del tercer objetivo, en el cual hace referencia a las
características organolépticas del producto, que se desarrollará con la ayuda del Centro de
Investigación Iche cocina manabita, el cual nos acompañara en la investigación y desarrollo
del objetivo. En el cuarto capítulo se emplea el conocimiento y la investigación desarrollada con el fin de
esbozar la fórmula, que faculte su aplicación en una bebida de rápida absorción, brindando
la energía que nos permita cumplir con nuestro objetivo principal.
