| dc.description | RESUMEN La innovación de productos, la incorporación de nuevas tendencias, sabores, texturas, formas y colores tienen, cada vez, mayor impacto en la industria pastelera cuencana y en el mercado en general; esto hace que la innovación se imponga como una necesidad productiva. Por esta razón, en la presente tesis se hará un estudio del mercado de la pastelería basándonos primordialmente en las decoraciones de sus tortas, con el fin de conocer la capacidad de innovación de las mismas y la importancia que esta tiene para los consumidores cuencanos. Este estudio determinará los segmentos de mercado existentes en Cuenca, de igual manera, se elaborarán sus perfiles para determinar las necesidades a atender. Para poder realizar este estudio, en primer lugar debemos segmentar el mercado, para lograrlo haremos uso de encuestas y grupos focales con el fin de recabar información relevante sobre el producto objeto de nuestro estudio. Mediante este estudio, podremos realizar una comparación entre las diferentes técnicas de decoración empleadas en el mercado actual, buscando de esta manera la satisfacción final del cliente. | es_ES |
| dc.description.abstract | ABSTRACT The innovation of products, the incorporation of new trends, flavors, textures, figures, and colors have, every time, a greater impact over the pastry industry of Cuenca and over the general market. This causes the innovation to become a productive need. For this reason, in the present thesis we will develop a market study of pastry focusing especially on the cake decorations, with the object of knowing the innovation capacity of cake decorations and the significance that these have over the costumers of Cuenca. This study will determine the existing market segments in Cuenca and the customer profiles will be developed to determine which are the needs to address. To be able to develop this study, we must firstly segment the market, to do this we will use surveys and focus groups, with the finality of obtaining relevant information about the product object of this study. Through this study we will be able to make a comparison between the various techniques of decoration that are used in the actual market, seeking with this the total satisfaction of the costumer. | es_ES |
