dc.description | En la actualidad el packaging es una de las herramientas de marketing más significativas, más allá de proteger y hacer funcional al producto; su rol está ligado en convertirse en un atractivo psicológico que pueda llegar a influir en el proceso perceptual del consumidor. Por esta razón, la industria alimentaria está cada vez más enfocada en conocer el efecto que genera el packaging en aspectos sensoriales del consumidor, para así mejorar su desarrollo y gestión. El presente artículo aborda esta temática investigando el efecto que genera el packaging en las percepciones sensoriales gustativas de Centennials de 16 a 18 años, mismas que resultan de la degustación de barras de chocolate negro. La investigación se estructura en un diseño cuasi experimental, donde se aplica una encuesta de evaluación sensorial tanto a un grupo experimental como de control conformados cada uno por 312 adolescentes. La experimentación utiliza dos tratamientos distintos de packaging con el mismo chocolate; como resultado se obtiene que dada la intervención de diferentes packaging las percepciones sensoriales gustativas difieren significativamente, el análisis estadístico que se realiza hace uso de pruebas de ANOVA de Friedman y ANOVA de Kruskal-Wallis. Adicionalmente, se aplica la prueba Chi cuadrado y el coeficiente de correlación de Spearman, con los que se establece un tipo de asociación entre los distintos packaging y la percepción sensorial gustativa, se asume también una posible relación entre los packaging y las sensaciones gustativas básicas de dulce y amargo; otro dato interesante es la existencia de una correlación positiva entre la percepción de gusto por el packaging y gusto por la sensación gustativa. Finalmente, la investigación expone como el consumidor centennial da significado a sus percepciones del packaging a través de adjetivos y como los elementos de packaging generan un impacto diferente en los consumidores. | en_US |
dc.description.abstract | Currently, packaging is one of the most significant marketing tools, beyond protecting and making the product functional; its role is linked to becoming a psychological attraction that can influence the consumer's perceptual process. For this reason, the food industry is increasingly focused on knowing the effect of packaging on consumer’s sensory issues, in order to improve its development and management. This article addresses this issue by investigating the effect that packaging generates on sensory taste perceptions of Centennials aged 16 to 18, which result from tasting dark chocolate bars. The research is structured in a quasi-experimental design, where a sensory evaluation survey is applied to both an experimental and a control group. Each one of groups are composed of 312 teens. The experimentation uses two different packaging treatments with the same chocolate. As a result, the sensory taste perceptions differ significantly; the statistical analysis that are applied ANOVA of Friedman and ANOVA of Kruskal-Wallis test. Additionally, Chi square test and Spearman coefficient are applied, which establish there is a type of association between the different packaging and taste sensory perception, also a possible relation between the packaging and basic taste sweet and bitter is assumed. Another interesting fact is the existence of a positive correlation between liking towards the packaging design and liking towards taste sensation. Finally, the study shows how centennial consumer gives meaning to their packaging perceptions through adjectives and how packaging elements generate different impact on consumer. | en_US |
