dc.description | El presente trabajo se llevó a cabo en el periodo de noviembre 2019 – febrero 2020, en el Laboratorio de Alimentos del Departamento de Biociencias de la Universidad de Cuenca, en donde se extrajo el colorante y saborizante de la mora (Rubus glaucus) por el método de maceración en frío, con el fin de presentar una opción natural a los colorantes y saborizantes artificiales de venta comercial. Se realizaron pruebas cualitativas para la identificación de flavonoides por el método de Shinoda, Zn/HCl e NaOH 1N y de antocianinas por el método de pH ácido y alcalino, los cuales presentaron resultados positivos para presencia de dichas sustancias. Se desarrollaron estudios de estabilidad del producto a diferentes temperaturas, pH y condiciones de luz; se observó que el extracto obtenido posee mayor estabilidad en obscuridad y a temperatura de refrigeración. Al ser el producto para consumo alimenticio, este debe ser inocuo para el consumidor por lo que se realizaron pruebas de control microbiológico para E. coli, Coliformes totales, Mohos y Levaduras obteniendo resultados negativos para todos estos microorganismos. dc.description.abstract | This work was carried out during the period from November 2019 - February 2020, in the Food Laboratory of the Biosciences Department of the “Universidad de Cuenca”. Where the dye and flavoring of the blackberry was extracted using the cold maceration method. Qualitative tests were accomplished using the Shinoda method, Zn/HCl and NaOH 1N for the identification of Flavonoids. And, the acidic and alkaline pH method for the identification of Anthocyanins. These tests presented positive results for such substances. Stability studies of the product were tested at different temperatures, pH, light, and darkness. Which demonstrated that the extract has greater stability in the dark and at refrigeration temperature. The product for being food, it must be harmless to the consumer. So, microbiological control tests were carried out for E. coli, total coliforms, molds, and yeasts. Obtaining negative results for all these microorganisms. Once the microbiological tests were completed, the sensorial analysis of consumer acceptance of the product was carried out.
