| Abstract: | The objective of this investigation is the elaboration of a biodegradable film with antibacterial effect by adding essential oils in its formulation, since it has antibacterial properties which inhibit bacterial growth extending the shelf life of food, so they can be used as food coatings. At present there is a great variety of packaging for foods of synthetic origin of a single use that take years to decompose accumulating generating pollution.
In order to obtain the essential oils, the steam drag extraction method was used. The essential oils of celery (Apium graveolens), laurel (Laurus nobilis) and thyme (Thymus vulgaris), which had a yield of 0.009, 0.96 and 0.15% respectively. Subsequently, a microbial activity bioassay was carried out with different concentrations of essential oil which were 2.5, 5 and 10% with three types of Escherichia coli, Staphylococcus aureus and Enterococcus sp bacteria, obtaining a positive control for E. coli bacteria with the oil Celery and bay leaf essentials in a 5% concentration.
For the production of biodegradable films, two base components were used, chitosan and cassava starch.
The shelf life test was performed to evaluate the inhibitory effect of the films using beef. The result showed that celery essential oil had a 30.27% inhibition of bacterial growth against E. coli bacteria. |
| Description: | El objetivo de esta investigación es la elaboración de un film biodegradable con efecto antibacteriano al adicionar aceites esenciales en su formulación, ya que poseen propiedades antibacterianas las cuales inhiben el crecimiento bacteriano alargando la vida útil de los alimentos, por lo que pueden ser usados como recubrimientos en alimentos. En la actualidad existe una gran variedad de empaques para alimentos de origen sintético de un solo uso que demoran años en descomponerse acumulándose generando contaminación.
Para la obtención de los aceites esenciales se utilizó el método de extracción por arrastre de vapor. Los aceites esenciales de apio (Apium graveolens), laurel (Laurus nobilis) y tomillo (Thymus vulgaris), los cuales presentaron un rendimiento de 0.009, 0.96 y 0.15% respectivamente. Posteriormente se realizó un bioensayo de actividad microbiana con distintas concentraciones de aceite esencial las cuales fueron 2.5, 5 y 10% con tres tipos de bacterias Escherichia coli, Staphylococcus aureus y Enterococcus sp, obteniéndose un control positivo para la bacteria E. coli con el aceite esencial de apio y laurel en una concentración del 5%.
Para la elaboración de los films biodegradables se usó dos componentes base que son el quitosano y el almidón de yuca.
Se realizó el ensayo de vida de estante para evaluar el efecto inhibitorio de los films usando carne de res. El resultado mostró que el aceite esencial de apio tuvo un 30.27% de inhibición de crecimiento bacteriano frente a la bacteria E. coli. |
