dc.description | Antecedentes: Según la Organización Panamericana de la Salud (OPS) toda persona puede transferir patógenos a cualquier tipo de alimento; pero eso puede ser evitado por medio de una higiene personal y manipulación adecuados (1). Objetivo: Determinar los conocimientos, actitudes y prácticas de medidas higiénico- alimentarias en los estudiantes de segundo bachillerato de la Unidad Educativa San Francisco de la ciudad de Cuenca en el año 2017. Metodología: Se realizó una investigación de tipo descriptiva y transversal. El universo estuvo conformado por 240 estudiantes de segundo de bachillerato de la Unidad Educativa San Francisco. Se aplicó una encuesta y la información fue recolectada en formularios. Se procesaron los datos utilizando el programa SPSS V.15 mediante frecuencia absoluta y porcentajes, los cuales fueron representados en tablas. Resultados: La mayoría de los estudiantes tienen entre 18 a 21 años de edad (33,8%), son de sexo masculino (55,8%) y residen en el área urbana (62,9%). El 96,3% sabe qué es higiene, el 86,7% conoce qué son las medidas higiénico-alimentarias y el 84,2% los riesgos de no practicarlas. Para el 39,6% la principal medida es lavarse las manos antes de manipular los alimentos, el 97,1% refiriere que es importante aplicarlas de manera habitual y el motivo fundamental es evitar enfermedades (44,6%). Las normas que menos se cumplen son lavar las frutas y verduras antes de consumirlas (46,7%) y lavarse las manos antes de comer (45,8%). Conclusiones: Los estudiantes analizados manifiestan poseer un buen conocimiento de las medidas higiénico-alimentarias y tienen una actitud positiva respecto a estas, pero sus prácticas son insuficientes | es_ES |
dc.description.abstract | Background: According to the Pan American Health Organization (PAHO), any person can transfer pathogens to any type of food; but this can be avoided by proper personal hygiene and manipulation (1). Objetive: To determine the knowledge, attitudes and practices of hygienic-alimentary measures in the high school students of the Unidad Educativa San Francisco of the city of Cuenca in the year 2017. Methodology: A descriptive and transversal research was carried out. The universe was made up of 240 high school students from the Unidad Educativa San Francisco. A survey was conducted and the information was collected on forms. The data were processed using the SPSS V.15 program using absolute frequency and percentages, which were represented in tables Results: The majority of students are between 18 and 21 years of age (33.8%), are male (55.8%) and live in urban areas (62.9%). 96.3% know what hygiene is, 86.7% know what the hygienic-alimentary measures are and the risk of not practicing them is 84.2%. For 39.6%, the main measure is to wash their hands before handling food, 97.1% said that it is important to apply them regularly and the main reason is to avoid diseases (44.6%). The rules that are least followed are wash the fruits and vegetables before consuming them (46.7%) and wash hands before eating (45.8%). Conclusions: The students analyzed have a good knowledge of the hygienic-alimentary measures and have a positive attitude towards them, but their practices are insufficient. | es_ES |
