| Abstract: | BACKGROUND:
The Vicente Corral Moscoso Hospital has been using the Traditional Enteral Diet made with typical ingredients of the region in a 2:1 ratio compare with commercial formulas which represents lower costs for the institution.
OBJECTIVE: To analyze the energy density and the percentage of adequacy of macronutrients and measure the calories of the Traditional Enteral Diet which is prepared at the Food Service Area of the Vicente Corral Moscoso Hospital.
METHODS: The present study is a descriptive study with a prospective longitudinal cut using quantitative variables which allowed us to calculate the macronutrients, the caloric intake, the percentage of adequacy and the energy density of the Traditional Enteral Diet of the Hospital. The universe was 202 rations of enteral diets corresponding to the period between November 21 to December 20, 2016. The data obtained were entered in the Microsoft Excel 2010 platform for the calculation of nutritional values of the diet and elaboration of tables. The average of the 30 rations was obtained through the statistical program SPSS V.22.
RESULTS: The percentage of adequacy of each ration had the following percentages: proteins 85.35%, fats 63.22%, carbohydrates 28.45% and total calories 44.31%. The energy density per serving showed a 45%.
CONCLUSIONS: The values obtained showed a deficit of macronutrients and total calories per serving. Per meal times, it is shown that only the amount of protein is adequate for lunch and dinner |

En el Hospital Vicente Corral Moscoso, se ha venido utilizando la Dieta Enteral Artesanal, compuesta por alimentos propios de la región, en una relación 2:1 con las fórmulas comerciales debido que representa un menor gasto para la institución.
OBJETIVO: Analizar la densidad energética y el porcentaje de adecuación de macronutrientes y calorías de la Dieta Enteral Artesanal, elaborada en el área de preparación de dietas en el Servicio de Alimentación del Hospital Vicente Corral Moscoso.
METODOLOGÍA: En el presente trabajo de investigación, se utilizó un estudio descriptivo de corte longitudinal prospectivo con variables cuantitativas, que permitió conocer los macronutrientes, el aporte calórico, el porcentaje de adecuación y densidad energética de la dieta enteral artesanal del Hospital. El universo fue de 202 raciones de dietas enterales artesanales que correspondieron a un período de 30 días, desde 21 de Noviembre hasta 20 de Diciembre de 2016. Los datos obtenidos se ingresaron al programa Microsoft Excel 2010 para el cálculo de los valores nutricionales de la dieta y elaboración de tablas; el promedio de las 30 raciones se obtuvo a través del programa estadístico SPSS V.22.
RESULTADOS: El porcentaje de adecuación de la ración presenta los siguientes porcentajes: para proteínas el 85,35%, grasas 63,22%, carbohidratos 28,45% y calorías totales 44,31%. La densidad energética por ración muestra un 45%.
CONCLUSIONES: Los valores obtenidos, demuestran déficit de macronutrientes y calorías totales por ración. De acuerdo a los tiempos de comida, se muestra que, solamente la proteína es adecuada en almuerzo y merienda |
