dc.description | Las aflatoxinas son metabolitos tóxicos muy potentes con efectos cancerígenos, teratogénicos, mutagénicos, hepatotóxicos e inmunosupresores, que constituyen un riesgo potencial para salud de los seres humanos, por lo que deben ser considerados como un problema latente que requiere ser examinado continuamente con el fin de garantizar la calidad de los alimentos. Este estudio se realizó con el objetivo de determinar cuantitativamente el contenido de Aflatoxina M1 en tres tipos de leche cruda, pasteurizada y ultra pasteurizada consumidas en la ciudad de Cuenca, mediante la Técnica de Cromatografía Liquida de alta resolución HPLC, tras un proceso de extracción en columnas de inmunoafinidad. Se efectuó el análisis de 84 muestras en total y para cada clase de leche se realizaron dos muestreos correspondientes cada uno a diferentes lotes de producción, tres muestras por cada lote, es decir seis muestras por marca en el caso de las leches entera y descremada UHT y dos muestras en el caso de la leche entera pasteurizada y la leche cruda. Se encontraron 16 muestras positivas que estaban entre el límite de detección y cuantificación (0,09 – 0,18p.p.b.), obteniéndose una prevalencia del 19%. Los valores de AFM1 fueron inferiores a la concentración permitida por la normativa nacional vigente INEN 9-10 (0,5 p. p.b.) e internacionalmente por la FDA (0,5 p.p.b.); por lo que, la concentración de AFM1 en las leches analizadas por la técnica de cromatografía líquida de alta resolución HPLC no contiene niveles que constituyan un peligro para la salud de la población consumidora. | es_ES |
dc.description.abstract | Aflatoxins are very powerful and immunosuppressive toxic metabolites carcinogenic, teratogenic, mutagenic, hepatotoxic, which constitute a potential health risk to humans, so it should be considered as a potential problem that needs to be continually reviewed in order to ensure the quality of food. This study was conducted to quantitatively determine the content of aflatoxin M1 in three types of raw milk, pasteurized and ultra-pasteurized consumed in the city of Cuenca, by the technique of high performance liquid chromatography HPLC resolution, following an extraction process immunoaffinity columns.
